Recipes worth cracking open

Six easy ways to put a Freedom Range egg to work, from a quick weekday breakfast to something worth setting the table for.

A classic fluffy omelette
Serves 18 min

Classic fluffy omelette

Soft-set, buttery, and folded in under ten minutes — the everyday standard every other omelette is measured against.

Ingredients
  • 3 Freedom Range eggs
  • 1 tbsp milk or water
  • 1 tbsp butter
  • Pinch of salt and white pepper
  • 2 tbsp chopped chives (optional)
Method
  1. Whisk the eggs, milk and salt until no streaks remain and slightly frothy.
  2. Melt butter in a non-stick pan over medium-low heat until foaming.
  3. Pour in the eggs; let sit 10 seconds, then gently push the edges to the centre, tilting the pan so uncooked egg runs to the edge.
  4. While still a little glossy on top, scatter chives over one half.
  5. Fold in half, slide onto a plate and serve immediately.
Shakshuka, eggs poached in tomato sauce
Serves 2-330 min

Shakshuka

Eggs gently poached in a smoky, spiced tomato sauce — one pan, minimal effort, maximum mopping-up-the-sauce satisfaction.

Ingredients
  • 4 Freedom Range eggs
  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 tsp cumin, 1 tsp paprika, pinch of chilli flakes
  • 400g crushed tomatoes
  • Salt, pepper, chopped parsley, crusty bread
Method
  1. Heat oil in a wide pan and soften the onion and pepper, about 6-7 minutes.
  2. Add garlic, cumin, paprika and chilli flakes; cook 1 minute until fragrant.
  3. Pour in the tomatoes, season, and simmer 12-15 minutes until thickened.
  4. Make small wells in the sauce and crack an egg into each.
  5. Cover and cook 5-7 minutes until whites are set but yolks stay soft.
  6. Scatter with parsley and serve straight from the pan with bread.
Nasi goreng topped with a fried egg
Serves 220 min

Nasi goreng with fried egg

A crisp-edged fried egg on smoky, sweet-savoury fried rice — the topping that makes the plate.

Ingredients
  • 2 Freedom Range eggs, fried, for topping
  • 2 cups cooked day-old rice
  • 2 tbsp oil
  • 2 shallots, sliced; 2 garlic cloves, minced; 1 red chilli, sliced
  • 100g chicken or prawns (optional)
  • 2 tbsp sweet soy sauce (kecap manis), 1 tbsp soy sauce
  • Sliced cucumber, tomato and fried shallots to serve
Method
  1. Heat 1 tbsp oil in a wok and fry the shallots, garlic and chilli until fragrant.
  2. Add chicken or prawns if using, and cook through.
  3. Add the rice, breaking up clumps, and stir-fry 3-4 minutes.
  4. Pour in both soy sauces and toss until coated and lightly charred at the edges.
  5. In a separate pan, fry the eggs sunny-side up in the remaining oil until crisp-edged.
  6. Plate the rice topped with a fried egg, cucumber, tomato and fried shallots.
Classic deviled eggs
Makes 12 halves25 min

Classic deviled eggs

Creamy, tangy, and always the first thing to disappear off a party platter.

Ingredients
  • 6 Freedom Range eggs
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp white vinegar
  • Salt and pepper
  • Paprika and chives, to garnish
Method
  1. Cover eggs with cold water, bring to a boil, then remove from heat and sit covered for 10-11 minutes.
  2. Transfer to an ice bath, then peel.
  3. Halve lengthwise and scoop the yolks into a bowl.
  4. Mash yolks with mayonnaise, mustard, vinegar, salt and pepper until smooth.
  5. Spoon or pipe the mixture back into the whites.
  6. Dust with paprika and scatter with chives before serving.
Spanish tortilla
Serves 440 min

Spanish tortilla

A thick, golden potato and egg omelette — sliced into wedges and just as good warm, room temperature, or the next day.

Ingredients
  • 6 Freedom Range eggs
  • 4 medium potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 120ml olive oil
  • Salt, to taste
Method
  1. Heat the olive oil in a wide non-stick pan over medium-low heat. Add the potatoes and onion, season with salt, and cook gently for 20-25 minutes, turning occasionally, until tender but not browned.
  2. Drain the potatoes and onion, reserving the oil, and let cool slightly.
  3. Whisk the eggs with a pinch of salt in a large bowl, then fold in the potatoes and onion.
  4. Heat 1 tbsp of the reserved oil in a 20cm non-stick pan over medium heat. Pour in the egg mixture and cook for 3-4 minutes until the edges set.
  5. Place a plate over the pan, flip the tortilla onto it, then slide it back into the pan to cook the other side for 3-4 minutes.
  6. Slide onto a plate, rest for a few minutes, then slice into wedges to serve.
Chawanmushi, a Japanese steamed egg custard
Serves 435 min

Chawanmushi

A silky Japanese steamed egg custard, savoury and delicate — served warm, straight from the cup.

Ingredients
  • 3 Freedom Range eggs
  • 2 cups dashi or light chicken stock, cooled
  • 1 tbsp soy sauce, 1 tsp mirin, pinch of salt
  • A few slices of mushroom, prawn or chicken (optional)
  • Sliced spring onion, to garnish
Method
  1. Whisk the eggs gently, avoiding too much froth.
  2. Stir in the cooled stock, soy sauce, mirin and salt.
  3. Strain through a fine sieve for a silky texture.
  4. Divide any mushroom, prawn or chicken between four small cups, then pour over the egg mixture.
  5. Cover each cup with foil and steam over low heat for 15-18 minutes until just set with a gentle wobble.
  6. Garnish with spring onion and serve warm.
